METHOD
Trim and skin the tuna
(if necessary), and cut into long strips about 1 1/2 inches wide.
Place them in a bowl
and coat with sesame oil; marinate about 20 minutes.
Place sesame seeds on
a plate, and turn the tuna strips in them until coated.
Add the peanut oil to
a heavy skillet, and set over a medium-high heat. Place the tuna strips
in the pan, a few at a time, and sear until cookedabout 2 minutes
per side (the centers will be rare.
Slice the strips thinly,
and serve with avocado vinaigrette.
Avocado Vinaigrette:
Place all ingredientsexcept the oilin a blender, and puree
until smooth. While the blender is running, add the oil, a little at a
time, until it is emulsified. Yield: 1 1/2 cups.
Serves: 4 - 6
