Seared Tuna with Sesame and Avocado Vinaigrette

To make seared tuna, please be sure to buy the freshest piece of tuna. The avocado vinaigrette on this tuna is spicy and flavorful.

  • (One) 3 pound piece of fresh tuna
  • 1/4 cup sesame oil
  • 1 cup white sesame seeds
  • 2 tablespoons peanut oil

Avocado vinaigrette

  • 1 ripe Haas avocado, pitted an peeled
  • 1 tablespoon wasabi paste
  • 1/4 cup chopped red onion
  • 1/3 cup fresh lime juice
  • 1 tablespoon sugar
  • 1 1/4 cup olive oil
  • Salt and freshly ground black pepper, to taste
 

METHOD

Trim and skin the tuna (if necessary), and cut into long strips about 1 1/2 inches wide.

Place them in a bowl and coat with sesame oil; marinate about 20 minutes.

Place sesame seeds on a plate, and turn the tuna strips in them until coated.

Add the peanut oil to a heavy skillet, and set over a medium-high heat. Place the tuna strips in the pan, a few at a time, and sear until cooked—about 2 minutes per side (the centers will be rare.

Slice the strips thinly, and serve with avocado vinaigrette.

Avocado Vinaigrette: Place all ingredients—except the oil—in a blender, and puree until smooth. While the blender is running, add the oil, a little at a time, until it is emulsified. Yield: 1 1/2 cups.

Serves: 4 - 6
