Scallop with Red Pepper Sauce

Red pepper sauce is very versatile. You can use this on chicken as well as scallops if you omit the lemon. This is spicy with a good dose of cayenne. Adjust to your taste. You can use sea scallops or bay scallops for this recipe.Be sureto dry scallops well before cooking.

  • 3 large red bell peppers
  • 1/4 teaspoon salt
  • 1 teaspoon grated lemon rind
  • 3 tablespoons fresh parsley, minced
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 tablespoons olive oil
  • 1 1/2 pounds sea or bay scallops

 

 

METHOD

Roast and peel red bell peppers.

Place peppers in a food processor with salt, lemon peel, parsley and cayenne pepper. Process until pureed.

Heat olive oil in sauté pan. When heated, put in scallops. Cook on one side for two minutes. If using sea scallops, turn scallops and cook on other side 2 - 3 minutes more. If using bay scallops, stir and cook for 1 - 2 minutes more.

Put scallops in serving bowl. Pour half the red pepper sauce over scallops and mix well. Put remaining sauce in a bowl to serve on the side.

This can be served with rice, but is especially delicious with polenta.

Serves: 4 - 6
