METHOD
Mix scallops with curry
paste and marinate for at least 15 minute.
Heat oil in a wok and
stir-fry garlic until just golden. Add scallops curry paste, and chilies.
Stir-fry for 2 minutes. Add fish sauce and sugar, and cook 1 minute.
When scallops are tender
and have just whitened (about 1 minute more), stir in most of the basil
and remove from heat.
Divide Scallops on bed
of stir-fried bok choy on 4 serving plates and garnish with remaining
basil. Serve with a bowl of white or brown rice.
