Thai Scallops (spicy)

You can buy Thai red curry paste and Thai fish sauce in specialty gourmet stores. Junior Trimmer tells us that this Thai recipe for scallops ' bites.' It is a spicy dish.

  • 18 medium-large fresh sea scallops, washed
  • 4 tablespoons Thai red curry paste
  • 2 tablespoons vegetable or olive oil
  • 2 cloves garlic, finely chopped
  • 2 red chilies, sliced
  • 2 tablespoons Thai fish sauce
  • 1 tablespoon granulated sugar
  • 1 large handful fresh basil
  • 1 bunch Bok choy (Chinese cabbage) stir-fried

 

 

METHOD

Mix scallops with curry paste and marinate for at least 15 minute.

Heat oil in a wok and stir-fry garlic until just golden. Add scallops curry paste, and chilies. Stir-fry for 2 minutes. Add fish sauce and sugar, and cook 1 minute.

When scallops are tender and have just whitened (about 1 minute more), stir in most of the basil and remove from heat.

Divide Scallops on bed of stir-fried bok choy on 4 serving plates and garnish with remaining basil. Serve with a bowl of white or brown rice.
