Curried Scallops

Please use sea scallops for this recipe. Bays are too small. Be sure scallops are dried well before using.

  • 1/4 cup honey (or light corn syrup)
  • 2 teaspoons curry powder
  • 1/4 cup prepared mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon white pepper
  • Small pinch cinnamon
  • 2 pounds sea scallops
 

METHOD

Combine honey, curry powder, mustard, lemon juice, white pepper and cinnamon.

Using a non-stick cookie sheet, baking pan, or foil lined pan, arrange scallops without any of them touching.

Brush scallops generously with the prepared mixture, reserving some for the other side.

Put pan in lowest position beneath broiler for 10 minutes.

Turn scallops over and brush again with basting mixture. Broil for another 10 minutes, then serve.

Serves: 4- 6
