Scallops Creole Style

This scallop recipe is easy and quick as well as tasty.

  • 2 cups (1 pound can) stewed tomatoes
  • 1 pound sea scallops
  • 1 mild onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 tablespoons all-purpose flour
  • 1/4 cup water
  • Salt and pepper to taste
  • Hot, cooked rice

 

 

 

METHOD

Combine tomatoes, scallops, onion and green pepper in a saucepan and bring to boil. Reduce heat and simmer for 5 minutes.

Combine flour and water and mix thoroughly. Stir this into the simmering saucepan and cook, stirring constantly, until thickened.

Season with salt and pepper to taste.

Serve over hot rice.

Serves: 4 - 6
