Scallops en Brochette

 

You should look for fairly large scallops for this recipe. Since you want to cook long enough to broil away some bacon fat, the scallop should not be so small as to cook quickly and toughen.

  • 1/2 cup red onion, chopped
  • 2 tablespoons honey
  • 2 tablespoons bourbon
  • 1/4 teaspoon cayenne pepper
  • 6 slices bacon (not thick sliced)
  • 1 1/2 pounds sea scallops
 

METHOD

Mix together onion, honey, bourbon and cayenne pepper. Mix well. Add scallops and mix gently to coat. Marinate in refrigerator 2 - 4 hours.

Thread one end of bacon on a skewer. Place a scallop on top. Fold bacon onto skewer over scallop. Place another scallop and fold bacon again. Continue until bacon is used up. You will use about 6 - 8 scallops, depending on size.

Place on lightly oiled baking pan or foil. Put under broiler placed at lowest position. Broil 6- 8 minutes or until bacon is crisp, turning once. Or you may grill over outdoor grill.

Serves: 6
