Chinese Lobster with Soya

You may steam or boil the lobster click to see how

  • 1/2 teaspoon (2ml) sea salt
  • 1/4 teaspoon (1m) freshly ground black pepper
  • 3 tablespoons (40ml) good sherry
  • 2 teaspoons finely minced onion
  • 1 teaspoon mashed and chopped clove of garlic
  • 2 1/2 tablespoon (35ml) light Soya sauce
  • 2 teaspoons (8ml) brown sugar
  • 1/4 teaspoon (1ml) Chinese 5 spice
  • 1 pound (450g) freshly boiled lobster flesh
  • 3 tablespoons (30ml) sesame oil
  • 1 1/2 tablespoons (20ml) water
  • 1 teaspoon (5m) corn flour
 

METHOD

Mix together salt, pepper, sherry, onion, garlic, Soya sauce, sugar and 5 spice. Allow to stand for 15-20 minutes stirring occasionally so that the flavours infuse.

Chop the lobster meat into slightly larger than bite size pieces.

Heat the oil in a large wok until hot enough to fry the lobster flesh for a minute.

Mix together corn flour and water.

Add the sauce and simmer until a nice thick consistency. Stir in water/corn flour mix to thicken only if necessary.

Serve immediately with plain boiled white rice and a tart green salad.
