METHOD
Discard stems from both
mushrooms. Wipe clean with cloth. Cut oyster mushrooms in half inch pieces.
Set aside. Slice crimini mushrooms in thick slices. Add to shallots and
garlic.
Heat 2 tablespoons oil
in sauté pan. Stir in mushroom shallot mixture. Cook over medium
high heat. When mushrooms just begin to give up moisture, stir in oyster
mushrooms, parsley, white wine and cayenne. Cook until oyster mushrooms
are softened. Remove from heat and season with salt and pepper.
In separate pan, heat
remaining 2 tablespoons oil. Put in halibut steaks. Cook 5 minutes on
each side, uncovered. Add mushroom mixture to cook with fish for last
three minutes.
Serve with white rice.
