Calabash Style Cornmeal Coated Flounder Fry

"This recipe is a North Carolina Mountain Speciality. I was born and raised in NC but live in South Carolina now due to marriage. I love to cook, always testing and sharing recipes. My Mother who passed away in 1986 was a fabulous cook. I got my love of cooking from her. " Brenda Lovley

  • 2 tablespoons all purpose flour
  • 1 16oz. pkg fresh or frozen flounder (Thaw frozen fillets)
  • 1/2 cup seasoned dried bread crumbs
  • 1 egg
  • 1/2 cup cooking oil
  • 1/3 cup cornmeal
  • horseradish sauce

 

 

METHOD

On one sheet of waxed paper, place flour. In pie plate, with fork, beat egg with one teaspoon water. On another sheet of waxed paper, combine cornmeal and bread crumbs. Dip fillets in flour, then in egg mixture, then in cornmeal mixture until coated.

In 12 inch skillet over medium heat, in hot oil;, fry fillets, carefully turning once. Cook about 8 minutes or until fish flakes, when tested withe a fork. Serve horseradish with sauce.
