METHOD
Beat together egg and
milk. Set aside.
Combine flour, cornmeal,
salt and black pepper.
Pour oil in a 12 inch
or 14 inch skillet to a depth of 1/2 inch and heat over medium heat to
375° F, or until a piece of white bread dropped in the oil will brown
in one minute.
Dip fish first in egg
wash, then dredge in flour-cornmeal mixture.
Fry in hot oil 2 to 3
minutes per side, until golden brown.
Serves:4 - 6
