Southern Skillet Fried Catfish

Cooking in an iron skillet is a traditional southern way to cook catfish, but any fish fillets will taste good prepared this way.

  • 1 egg
  • 1-1/2 cup milk
  • 1 cup all-purpose flour
  • 3/4 cup yellow cornmeal (yellow gives a nicer color than white)
  • 1-1/2 teaspoon salt
  • 3/4 teaspoon black pepper
  • 2 pounds catfish (fillet or whole
  • Cooking oil for frying
  • 1 cast iron skillet 12-14 inch size
 

METHOD

Beat together egg and milk. Set aside.

Combine flour, cornmeal, salt and black pepper.

Pour oil in a 12 inch or 14 inch skillet to a depth of 1/2 inch and heat over medium heat to 375° F, or until a piece of white bread dropped in the oil will brown in one minute.

Dip fish first in egg wash, then dredge in flour-cornmeal mixture.

Fry in hot oil 2 to 3 minutes per side, until golden brown.

Serves:4 - 6
