Sea Bass/Trout Baked in Salt

 

A whole fish baked in salt is also a popular dish with the Chinese, This salt-baked fish recipe is from South Africa.

  • 1 large sea bass or trout, gutted and scaled
  • 2kg (4 1/2 pounds) coarse rock salt
  • Pepper
  • 1 - 2 tablespoons water
 

METHOD

Preheat oven to 350°F.

Season inside of fish with a little salt and ground black pepper.

Spread a thick layer of rock salt on the base of a deep baking tin.

Rest fish on salt, and cover almost entirely with more rock salt. It doesn't matter if head and tail are omitted.

Sprinkle salt with water so that salt will solidify and roast on top of fish.

Place in a preheated 350°F oven, and bake for 40-45 minutes.

Remove from oven. Pierce salt crust all the way through fish. If the tip of your knife is hot, the fish is cooked through. Allow to cool slightly before cracking through the roast salt. Lift back carefully as skin will come off with it.
