Old Fashioned Gingerbread

'When my mother prepared her Old Fashioned Gingerbread, the five of us couldn't wait until it came from the oven so that we could get our piece and smother it with butter. Or we would try to wait patiently while it cooled and then we'd drown the gingerbread with whipped cream and enjoy a piece of heaven." Vicki Anderson

  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 1/2 cup sugar
  • 1 egg
  • 1 cup molasses
  • 1 cup hot water
 

METHOD

Pre-heat oven to 350°F.

Thoroughly grease an oblong pan.

Combine flour, baking soda, cinnamon, ginger, cloves and salt. Set aside.

In a large bowl, combine butter, sugar and egg. Mix thoroughly.

Add dry ingredients, alternately add molasses and hot water mixture and pour in pan.

Bake 1 hour and 15 minutes, or until cake springs back when lightly touched in preheated 350°F. oven.

Serve with whipped cream when cooled.
