Gingered Figs

"This recipe is from my grandmother's handwritten recipe
book." Margaret Walker

  • 4 pounds ripe figs
  • 2 lemons
  • 3 pounds sugar
  • 3 cups of water
  • 2 ounces whole ginger or 5 tablespoons ground ginger
  • 1 teaspoon ground cloves
  • 3 cinnamon sticks

 

 

METHOD

Trim the stems on the figs and cut a small cross in the base of each one.

Slice the lemons thinly.

Simmer the figs in the water and spices for 5 minutes, add the sugar gradually and simmer over a low heat until the figs have become glassy and the syrup is thick, approximately one hour. Bottle into sterilized jars immediately.

The figs can be eaten as a very rich sweet with ice cream, or served with cheese. They are very rich but delicious.
