Ella's Pudding

"This pudding is a must for any household. It is so easy, yet delicious and it can de ready to dish up within 20 minutes!!.This recipe is in my family for over 40 years." Marieta Peverelli

Syrup

  • 2 cups water
  • 1 cup sugar
  • Add: half a teaspoon ground ginger or
  • 1 teaspoon ground cinnamon or
  • 1 teaspoon ground mixed spice or
  • 2 tblespoons brandy or
  • 2 tablespoons cacao

Batter

  • 2 tablespoons margarine
  • 2 large tablespoons apricot jam
  • 1 teaspoon bicarbonate of soda (baking soda) mixed in half a cup of milk
  • 1 cup flour
  • Salt
 

METHOD

In a large pot, bring water, sugar and flavouring of your choice to a boil. Stir occasionally.

Meanwhile mix margarine and jam in a mixing bowl. Stir in baking soda, milk, flour and salt. Combine well.

Spoon the batter into slowly boiling syrup. Cover immediately with a lid and simmer on low heat for 10 minutes.

Remove pot from heat. Take a clean drying-up cloth and place under the lid of the pot. The cloth will absorb the steam. Let sit until ready to use.

Serve with custard or ice cream.
