Easter Apple Cake

Margaret makes this Apple Cake for Easter, but we'd like it all year long.

  • 125 grams (4 ounces) butter or margarine
  • !/2 cup sugar
  • 2 eggs
  • 300 ml (81/2 ounces) sour cream
  • 1 teaspoon baking soda
  • 2 cups self- raising flour, sifted
  • 2 cooking apples - such as granny smith, peeled, cored and thinly sliced
  • 1/2 cup walnuts, chopped
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
 

METHOD

Preheat oven to 180° C (350° F).

Cream butter and sugar until light and fluffy, then add eggs one at a time. Beat well after each addition.

Add sour cream and baking soda, then beat well.

Add sifted flour, folding into mixture lightly.

Pour into a greased and lined 10 x 12 inch baking tin.

Arrange the sliced apples on top. Combine walnuts, sugar and cinnamon, and sprinkle on top of the apples.

Bake in preheated 180° C (350° F) oven for 35 to 40 minutes.

Yield: About 48 squares. Store in an airtight container.
