Cream Pie

Cream pies may be the most satisfying of all pies. Mom's apple pie may be the only exception.  They are a nice addition to the Thnaksgiving table.

Filling

  • 1 prepared graham cracker crust (click for recipe)
  • 2 cups scalded milk
  • 1/4 cup sugar
  • 2 tablespoons corn starch
  • 1/4 teaspoon salt
  • 3 egg yolks
  • 1 teaspoon vanilla

Meringue

  • 3 egg whites
  • 6 tablespoons sugar
  • Pinch of salt
 

METHOD

Preheat oven to 350° F.

Cook all filling in double boiler until pudding consistency. Use mixer to blend in pot.

Pour into a graham cracker crust in a 1 quart bowl. (Mother made her own crust)

Meringue: Beat egg whites until frothy. Add salt while beating. Add sugar 1 tablespoon at a time until dissolved and stiff peaks form. Gently place on top of filling.

Place in preheated oven at 350° F until brown.

Yield: 1 pie
