Chocolate Fantasy

Is it a parfait? A brown Betty? A healthy indulgence? Or is it all three? Don't use a cooking apple for this. You want the apple to soften rapidly.

  • 3 ounces chocolate bits
  • 3 tablespoons unsalted butter
  • 1 cup fine breadcrumbs
  • 1 teaspoon cinnamon
  • 2 medium apples, peeled, cored and sliced
  • 1/4 cup raisins
  • 1/2 cup brown sugar
  • 1/4 cup walnuts, chopped
  • 1/2 cup heavy cream
  • 3/4 cup plain yogurt

 

 

METHOD

Melt chocolate over double boiler. Set aside to cool.

Melt butter on low heat in small saucepan. Remove pan from heat, and stir in bread crumbs and cinnamon. Return to heat and cook over very low heat for 4 - 6 minutes, stirring. Take off heat, and set aside. Let cool. Mixture will crisp.

Place sliced apples in heavy bottom sauce pan with raisins and sugar. Cover pan with a clean, damp cloth. Put lid on top of cloth.(Be careful that cloth is not too long to hang near the flame.) Cook apples over low heat for five minutes.Take off heat and stir in walnut pieces, reserving a few pieces as garnish. Let cool.

Whip cream and yogurt with an electric beater set on low until it forms soft peaks. Fold in the cooled, melted chcolate.

Using glass bowls or decorative glasses (about 8 ounces), put a layer of apple mixture, followed by a layer of breadcrumb mixture, followed by a layer of chocolate mixture. Continue forming layers, ending with chocolate. Garnish with a sprinkling of walnuts.

Serves: 6
