Chocolate Cake

A good, old-fashioned chocolate cake. Can't beat it!

  • 2 cups flour
  • 2 cups free-flowing light brown sugar
  • 3/4 cups unsweetened cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup dark cold coffee
  • 1 cup milk

    CHOCOLATE FROSTING

    • 3 cups confectioners sugar
    • 2/3 cups unsweetened cocoa
    • 1/2 cup butter, melted and cooled
    • 3 tablespoons milk
    • 1 teaspoon vanilla
    • 2 tablespoons cold coffee

 

 

METHOD

In a large bowl, mix together flour, sugar, cocoa, baking soda, baking powder and salt. Stir until blended.

Beat eggs lightly. Mix with oil, coffee and milk. Stir into dry mixture.

Beat with electric mixer set at medium speed for 3 - 4 minutes.

Pour into two 8 inch layer pans and bake for 30 to 35 minutes. When finished, cool on wire racks and make frosting..

Frosting: In medium mixing bowl, beat together 1 cup sugar, cocoa, butter, milk and vanilla. When creamy, add remaining sugar and coffee. Beat until smooth.

Put icing on top of one cake. Put second cake on top of first, and ice the entire cake.

Yield: One chocolate-lovers cake.
