Chocolate Slice

"I actually make this Chocolate Slice for a cafe. It's extremely popular; even the local Firemen stop by for their daily ration. Recently, an Opera Singer on his way to London ." Jenni Paykel

  • 2 packets plain biscuits
  • 1 1/2 cups sultanas
  • 8 oz butter
  • 1 teaspoon vanilla essence
  • 2 tablespoons sweet sherry
  • 2 cups white sugar
  • 2 tablespoons cocoa powder
  • 2 eggs

 

 

METHOD

Crush biscuits and put aside with sultanas.

Melt butter in a large saucepan, add vanilla essence and sweet sherry.

Add sugar and cocoa powder. Beat eggs and add to butter mixture, stirring until it thickens slightly.

Add biscuits and sultanas. Mix well. Press into 12 x 8 inch Swiss roll tin. Ice with your favorite chocolate icing.

Refrigerate 4 hours. Cut into 32 fingers.
