Brown Sugar Peach Pie

We hadn't thought to use brown sugar with peaches until Junior sent us this recipe. Then we wondered why we hadn't thought of it as the crispness of brown sugar is perfect with peach.

  • Pie crust for double crust 9 inch pie
  • 3/4 cup brown sugar
  • 1/3 cup flour
  • 3 tablespoons light corn syrup
  • 1/3 cup soft butter or margarine
  • 4 fresh peaches or 3 1/2 cups canned (1 large can)
 

METHOD

Preheat oven to 400°F.

Line pie pan with half the rolled-out dough. Flute edges.

Put sugar, flour, corn syrup and butter in small saucepan. Cook over low heat until sugar dissolves, stirring constantly.

Arrange peaches in pastry-lined pan. Pour caramel mixture over.

Roll out second piece of dough and cut into strips. Top pie with rest of pastry, lattice style.

Bake in preheated 400°F oven for 50 minutes or until it appears to be bubbling through the lattice. Fluted edges will keep it from boiling over.
