Classic Brownies

There are those moments in life when only brownies will satisfy. Is it the chocolate? The crunch of the walnuts? Is it the combination? We don't know, but we love brownies.

  • 2 cups sugar
  • 3 large eggs
  • 1/2 cup (1 stick) butter
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup baking cocoa
  • 1/2 cup walnuts, chopped

 

 

METHOD

Preheat oven to 350°F. Butter a 9 x 9 inch baking pan. Set aside.

Melt butter. Let cool to lukewarm.

In a medium-sized mixing bowl, beat together sugar, eggs, cooled butter, vegetable oil and vanilla until smooth.

Stir in flour, baking powder, salt and cocoa. Combine well. Add walnuts.

Using a spatula to get every last drop of luscious chocolate, scrape batter into prepared baking pan. Bake in preheated 350°F oven until a tester inserted into center comes out clean, about 35 - 40 minutes.

Cool in pan set on top of rack. When slightly warm, they may be cut.

Yield: about 16 brownies
