Peanut Butter & Jelly Bread Pudding

  • Cooking spray
  • 8 slices whole wheat sandwich bread
  • 2/3 cup creamy peanut butter
  • 1/3 cup grape jam or jelly
  • 5 large eggs
  • 2 1/4 cup milk
  • 1/2 teaspoon pumpkin pie spice (or cinnamon, if you prefer)
  • 2 tablespoons granulated sugar
  • Maple syrup

 

 

METHOD

Pre-heat oven to 400 ° F. Lightly spray a 9x9-inch baking pan with cooking spray.

Make four sandwiches from bread, peanut butter and jelly.  Cut each sandwich into quarters, then cut each quarter into quarters again.  Arrange pieces in the pan, in a slightly jumbled fashion. 

In a mixing bowl, whisk together eggs, milk and spice. Pour this mixture evenly over the sandwich pieces and press the bread slightly with a fork to help the bread to absorb the egg mixture.

Bake 20-25 minutes, or until egg is nearly set.

Remove from oven and sprinkle the top with sugar.  Increase oven setting to "Broil";  broil the pudding until sugar begins to caramelize, about 1 minute.  Watch pudding closely to prevent the sugar from burning. Serve pudding drizzled with maple syrup.

Makes 4 generous servings
