Virgin Islands Benye

"The Benye, is a favorite of mine. During Carnival time down in the island, Benye is a favorite dessert that is sold by many of the vendors.The benye is also a dessert made down in Louisiana. Much of the Creole culture not only comes from the Islands, but much of the Creole influence is here too." Eleanor Murphy

  • 1 package active dry yeast
  • 4 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom (optional)
  • 1/2 teaspoon ground nutmeg
  • Few drops banana essence
  • 1/2 teaspoon mace
  • 1/2 cup sugar
  • 1 1/2 teaspoon grated orange peel
  • 2 tablespoons margarine, melted
  • 1 cup hot water
  • 7/8 cup mashed banana (very ripe)
  • Oil for frying

 

 

METHOD

Combine yeast, flour, spices orange peel and sugar. Add melted margarine to hot water. Gradually add dry ingredients. Beat for a minute or two. Add mashed bananas and mix well.

Cover with towel and set aside to rise until double in quantity. Batter should be medium soft. Drop by the spoonful into hot oil. Fry until brown. Drain on absorbent paper. Serve warm.
