Apple Cake

This is more apple than cake and makes a light, but sweet dessert.

  • 4 cups tart cooking apples, thickly sliced
  • 1 1/2 cups sugar
  • 2 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 eggs, lightly beaten
  • 2/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup walnuts, coarsely chopped

 

 

METHOD

Preheat oven to 350° F.

Put apples in large bowl. Sprinkle with sugar. Toss gently to combine. Set aside.

Sift flour, baking soda, salt, and cinnamon together. Set aside.

Combine eggs, oil and vanilla. Add apples and nuts. Stir to combine.

Slowly add dry ingredients and mix until combined. Do not over mix.

Pour into buttered 10 x 14 x 2 inch pan.

Bake for 45 to 60 minutes in preheated 350° F oven.

Serve with whipped cream on top.
