Cape Town Apple Cake

This Apple Cake recipe comes from a site member in Cape Town, South Africa. When we get such luscious recipes from around the world, we are indeed thankful for the Internet.

  • 4 ounces (125g) butter
  • 1/2 cup + 1 tablespoon (125g) sugar
  • 3 eggs
  • 1 1/2 cups of self raising flour
  • 4 apples peeled and cut into bite size pieces
  • 2 teaspoons cinnamon (10 ml) mixed with 3 teaspoons sugar (15mg)

CARAMELIZED SYRUP

  • 1/2 cup + 1 teaspoon (125g) sugar
  • 3/4 cup (200ml) milk
  • 1 teaspoon (5ml) caramel essence

 

 

METHOD

Preheat oven to 180° C (350° F).

Cream butter and sugar. Mix in eggs one at a time. Gradually add flour and mix to form a fairly stiff batter - if too stiff add some milk.

Pour into a well greased oven dish. Arrange apples on top. Sprinkle with cinnamon sugar, and bake in a preheated 180° C (350° F) oven . Bake for 20 minutes.

CARAMELIZED SYRUP: Boil sugar, milk and essence until mixture becomes sticky. Pour over cake just as it comes out of the oven. You can also serve with cream instead of caramel.

Yield: 1 cake
