Strawberries with Aged Balsamic Vinegar

You will have the best results with this if you use an aged balsamico - syrupy and rich.

  • 1 pound wild strawberries
  • 2 tablespoons traditional balsamic vinegar of Modena - Extra--old (25 years)
  • Sugar to taste
 
 

Method

Wash the strawberries thoroughly in cold water and hull them.  If using cultivated strawberries either halve or quarter them according to their size.  If, however, you have small, fragrant wild strawberries, these can be left whole.

Pour the balsamic vinegar over the strawberries, then cover the bowl with a lid and gently shake the contents so that the front is well seeped, then leave for 15 minutes.  Just before serving in small bowls add a little sugar.

To mix, repeat the same operation as before, covering the bowl.
