Famous 4th Street Deli Passover Sponge Cake

Nothing like a good old-fashioned Jewish Deli Cooking.  This is from the Famous 4th Street Deli in Philadelphia.  It was featured in the movie of the same name - Philadelphia- starring Denzel Washington and Tom Hanks.

  • 9 eggs, at room temperature and separated
  • 1 1/2 cups sugar
  • 1/2 cup freshly squeezed orange juice
  • Zest of 1 medium-size lemon, grated
  • 3/4 cup matzo cake meal
  • 1/4 cup potato starch
  • Pinch of salt
 

Method

Preheat the oven to 350 degrees.  Grease a 10 x 14-inch tube pan.

Beat the whites with an electric mixer on medium to high speed until they form soft peaks; set aside.  Beat the yolks on medium until they are light.  Add the sugar to the egg yolks and beat on medium.  Add the juice and lemon zest and beat on medium.  Fold in the cake meal, potato starch, and salt.  Mix it all together and fold in the whiles.  Bake for 50 to 60 minutes.  Invert the tube pan on a bottle until cool.

Serves: 8 to 10 .
