Method
About 2 hours before serving:
Preheat oven to 350F. Grease 12x8 inch baking dish.
Prepare noodles as directed on package. Drain. In a large
bowl, toss hot noodles with butter.
In medium bowl,
with wire whisk or fork, beat eggs, sugar, lemon peel
and salt until well mixed; stir in milk and raisins. Stir
mixture into noodles, and pour into dish. Bake 30 minutes.
Remove dish from oven, arrange peach slices on top,
and sprinkle evenly with streusel topping. Return to
oven and bake 15 minutes more. Let stand about 30
minutes for easier cutting. Serve warm.
Makes 10 servings.
Streusel topping:
In small saucepan over low heat, melt 2 tbsp butter
or margarine; stir in ¼ cup dried bread crumbs and ½ tsp cinnamon.
