Double Chocolate Muffins

chocolate chips in a chocolate base - delicious.

  • 1 stick (4 oz) butter or margarine
  • 3 (1 oz) squares unsweetened chocolate, cut up
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • Dash of salt
  • 1 cup buttermilk
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 cup (6oz) semisweet chocolate chips

 

 

Method

Preheat oven to 400°F.

In a 2-quart glass bowl, combine butter and unsweetened chocolate. Set a microwave oven on high, put in butter/chocolate mix and heat for about 2 to 3 minutes (depending on your microwave), until melted.  Stir to blend into smooth, even mixture. Set aside to cool room temperature.

Stir in sugar, egg, vanilla, salt and buttermilk.  Stir until completely blended. Mix together flour and baking soda and stir into chocolate mixture just until combined. Do not over stir.  Stir in chocolate chips.

Divide the batter between 12 paper lined 2-1/2 inch muffin cups, filling to top.

Bake 15 to 20 minutes in preheated oven, or until a cake tester inserted in center comes out clean. Let muffins cool in pans 5 minutes, then transfer to racks to cool completely. These are especially nice when served warm.
