Chocolate Muffins (Chips)

Muffins with chocolate in them are especially nice when served warm.

  • ¾ pound chocolate chips
  • 1/3 pound of soft butter
  • 4 medium eggs
  • 2 ½ cups flour
  • 1 cup sugar
  • ¼ cup milk
  • 1 tablespoon baking powder
  • ½ teaspoon vanilla
  • ½ teaspoon salt

 

 

Method

Preheat oven to 400°F .

Whisk butter and vanilla together until foamy. 

One at a time, add the eggs, whisking gently after each addition.  Add ¼ cup of the sugar after each egg and blend thoroughly.  Stir together baking powder, salt and milk.  Add to mixture.

Fold in flour and chips.  Mix, but do not overmix.

Divide between the cups of a lightly buttered muffin pan, filling each cup two-thirds full.

Bake in preheated oven for 25 minutes or until muffins turn golden brown.
