Irish Apple Duff

As simple as a recipe can be.  Happy St. Patrick's Day.

    • 4  medium apples, peeled and cored
    • 2 ounces brown sugar
    • 2 ounces raisins
    • Cinnamon to taste
    • 1 egg, lightly beaten
    • 1/2 pint heavy cream, whipped
    • 1 (12 oz) package prepared puff pastry
 

Method

Preheat the oven to 400°F.

Mix together the sugar, raisins and cinnamon.  Let sit for 5 minutes.

Stuff the centers of the apples with sugar mixture.

Roll out the pastry and cut out 4 circles approximately 8" in diameter. depending
  on the size of the apples. Put an apple in the center of each circle,and brush the edge with beaten egg; draw up as if wrapping a package. Work gently to not tear the pastry.   When apple is fully contained, press edges firmly to seal. Brush the tops of each apple package with the remaining egg to glaze.

Bake in a preheated 400°F oven for 40 minutes. Serve topped with whipped cream if desired.

Serves: 4
