Mango and Lime Fool

England is the home of the original "fool" - a pureed fruit that is folded into whipped cream.  Gooseberries are the classic dessert, but his combination of mango, lime, and cream is superb.

  • 1 ripe mango
  • Zest and juice of 1 lime
  • 3 tablespoons plain yogurt
  • 3 tablespoons heavy whipping cream
  • 1/4 cup powdered sugar
 

Method

Peel the mango, and remove the flesh from the seed.  Add to a food processor with the lime zest and juice.  Process until pureed.  Add the yogurt, cream, and powdered sugar to the processor and process until well blended.  Spoon into two dessert dishes and chill until ready to serve.

Serves: 2 .
