Nantucket Cranberry Pie

An old-fashioned pie that is simple and surprising

  • 2 cups raw cranberries
  • 1/2 cup sugar
  • 1/2 cup chopped walnuts
  • 1 cup sugar
  • 3/4 cup melted margarine
  • 1 cup flour
  • 1 teaspoon almond extract
  • 2 eggs, beaten
 

Method

 Lightly grease a 10 inch pie plate. Wash and pick over berries. Put in bottom of pie plate. Sprinkle with 1/2 cup sugar and walnuts which have been mixed together.

Mix sugar and melted margarine; add flour, flavoring and beaten eggs and beat until smooth. Pour over ingredients in pie plate.

Bake in preheated 325°F oven for 40 minutes (crust light brown and bubbly spots), may take a little longer. Serve with whipped cream.
