Cranberry Bread Pudding Recipe

A Thanksgiving or Christmas holiday treat.

  • 2 quarts day old bread
  • 2 Granny Smith apples (peeled, cored and cut in chunks)
  • 1 cup dried cranberries
  • 6 eggs, slightly beaten
  • 6 cups Half and Half
  • 1 tablespoon vanilla
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon grated nutmeg
  • Caramel or chocolate sauce
 

 

 

Method

Preheat oven to 350° F.

Tear bread into small pieces. Place in large mixing bowl. Add apples, cranberries and raisins. 

In a separate bowl, mix together with eggs, milk, vanilla,sugars and spices. When well blended, pour over the bread mixture and toss to blend well.  Allow to soak for 30 minutes. Pour into large rectangular baking pan at least 2-1/2 inches deep.

Bake in preheated 350° F oven for 45 minutes. Spoon into individual dishes and top with caramel or chocolate sauce to suit your own taste.

Serves 8.
