Cranberry Apple Crunch

We only have cranberries in the holiday season, so if you don't use them for Thanksgiving or Christmas, cook them in between. 

  • 2  apples, peeled, cored and cut in 1 inch pieces      
  • 1 cup fresh or frozen cranberries
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 cup uncooked oatmeal
  • 1/4 cup light brown sugar, firmly packed
  • 2 tablespoons flour
  • 3 tablespoons butter; softened

 

 

 

Method

Preheat oven to 350°F.

Combine apples, cranberries, sugar, 1/2 teaspoon cinnamon and allspice in  a bowl.  Lightly toss to coat the apples.  Gently does it so you don't harm the apples.

When well-mixed, transfer to a 1-quart baking dish.

Combine oatmeal, brown sugar, flour and remaining 1/2 teaspoon cinnamon in small bowl. Using your fingers or  a pastry cutter, rub or cut in butter until blended.  Sprinkle over fruit. 

Bake in preheated oven for 30 minutes or until topping is browned and fruit is bubbly. Allow to stand about 15 minutes just to settle, but serve warm.
