Cranberry Nut Bread

So quick during the holidays when cranberries are in season.

  • 2 cups sifted flour
  • 3/4 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup shortening
  • 3/4 cup orange juice
  • 1 tablespoon grated orange zest
  • 1 egg, lightly beaten
  • 1/2 cup chopped walnuts
  • 1 1/2 cups coarsely chopped cranberries, fresh or frozen

 

Method

Preheat oven to 350°F.

Sift together dry ingredients. Cut in shortening until mixture resembles coarse oatmeal.

Mix together orange juice, orange zest and egg. Pour into dry ingredients. Mix just enough to dampen.

Gently fold in nuts and fruit. Spoon into one large or two small loaf pans . Bake in preheated 350°F oven about one hour or until toothpick comes out clean. Remove and cool on a wire rack. Store overnight before slicing.

Yield: 1 large loaf or 2 small.
