Cranberry Cake

For Thanksgiving, Christmas or the entire holiday season.

  • 2 cups  cranberries, rinsed, picked  over, and gently dried
  • 1 1/2 cup  sugar, (divided use)
  • 1/2 cup  chopped nuts
  • 2 eggs
  • 1 stick margarine, melted and cooled
  • 1 stick butter, melted and cooled
  • 1 cup all-purpose flour

 

 

 

Method

Preheat oven to 325° F.  Lightly grease a 10 inch pie plate.

Mix together cranberries, 1/2 cup sugar, and nuts and pour into pie plate.

Beat together the eggs and remaining 1-cup sugar. Add the margarine, butter and flour, stirring to blend well.

Pour this batter over cranberry mixture and bake in a preheated oven for 50 to 60 minutes. Serve plain or with vanilla ice cream.

Serves: 8
