Cranberry & Pear Crisp

This is an interesting crisp since it incorporates brown rice.  Very healthy and very nice at the holidays.

  • Vegetable cooking spray or butter to grease pan
  • 3 cups well-cooked brown rice

  • 2 cups peeled pears, diced
  • 1 cup chopped cranberries (your choice - fresh or frozen)
  • 1/2 cup brown sugar, firmly packed (divided use)
  • 1/4 cup rolled oats
  • 3 tablespoons butter or margarine
  • 1/4 cup chopped pecans
  • 1/4 cup flaked coconut
 

 

 

Method

Lightly butter or spray a two quart baking dish. 

Combine rice, pears, cranberries, 1/3 cup sugar, and 2 tablespoons flour. Place this mixture in prepared baking dish and set to the side. 

Combine remaining flour, remaining sugar, and oats in a medium bowl. Cut in butter with pastry blender or with deft fingers until mixture resembles coarse meal. Add pecans and coconut and stir (not with deft fingers) to blend well.  Sprinkle over rice mixture.

Bake in preheated oven for 25 minutes or until thoroughly heated. Let settle for a few minutes, but serve warm.
