Autumn Apple Cheesecake

 

  • 1 cup Graham Cracker crumbs
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup margarine, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla
  • 4 cups thinly sliced peeled apples
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped pecans  
 

Method

Combine crumbs, sugar, cinnamon and margarine, press onto bottom of 9-inch springform pan. Bake at 350 degrees F., 10 minutes.

Combine cream cheese and sugar, mixing at medium speed on electric mixer, until well blended. Add eggs, one at a time, mixing well, but not overmixing after each addition.  Blend in vanilla, pour over crust.

Toss apples with combined sugar and cinnamon.  Spread apple mixture over cream cheese layer, then sprinkle with pecans. Bake in preheated 350 degrees F. oven for 1 hour and 10 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill.

Variation:  Add 1/2 Cup finely chopped pecans with crumbs for crust. Continue as directed.
