Vanilla-Scented Pecan Pie

Topping

  • 3 eggs
  • 1/4 cup sugar
  • 1 cup white Karo syrup
  • 1 teaspoon vanilla extract

Pie:

 

Method

Preheat oven to 350° F. 

Topping: In a medium-large bowl with ample room to stir, combine all topping ingredients.  Blend well and Set aside.

Filling: In a separate bowl, also roomy for mixing, mix softened cream cheese with sugar, salt, vanilla, and egg.  Stir well to mix thoroughly. 

Pour into prepared, unbaked pie shell. Sprinkle pecans evenly over the top, then pour prepared topping mixture evenly over the pie. Bake for 45 minute in preheated 350 °F oven. Let cool on wire rack. Do not chill this pie.  It is delightful when warm, but never should be cooler than room temperature.
