Kentucky Lemon Pie

Dare we say that this is as simple as 'pie?'

    • 1 unbaked pie shell
    • 5 eggs
    • 1 ½ cups Karo syrup (white)
    • 1 cup sugar
    • Juice of 2 lemons
    • Rind of 1 lemon
    • ¼ cup butter, softened
 

Method

Preheat oven to 375°F .

Beat eggs well; add syrup and combine. Add sugar, lemon juice and grated rind. Add butter and beat together until well mixed.

Pour into unbaked pie shell and bake on the lower shelf of preheated 375°F oven for 10 minutes. Move to a middle shelf, and reduce the heat to 350°F for 30 to 40 minutes.
