Tropical Tofu Iced Popsicle Recipe

Flavors of the tropic - and nutritional benefits as well.

  • Juice of 2 oranges (approximately
  • 1/2 cup juice) 3 kiwis, peeled and chopped
  • 2 mangoes, peeled and chopped
  • 1 (8.5-ounce) container O.N.E. Coconut Water with a Splash of Passion Fruit
  • 1/4 cup silken tofu
  • 3 tablespoons coconut sugar
 
 

Method

Combine orange juice, kiwis, mangoes, coconut water, tofu, and coconut sugar in your blender, and puree until smooth.

Pour mixture into chosen pop molds and put sticks in place.

Freeze pops until solid.

Makes 8 (5-ounce) pops

Coconut water is the purest liquid, second only to water. It is chock-full of electrolytes, calcium, potassium, and magnesium (7). I like the O.N.E. Coconut Water brand because it is tasty, healthy, and comes in fun flavors. If you cannot find this brand at your local store, you can use plain coconut juice and flavor it with a passion fruit juice of your liking.
