Fresh Peaches with Ricotta Stuffing

Italian Ricotta cheese is so versatile, picking up either sweet or savory tastes.  Maple syrup is a lovely sweetener for its free-flowing qualities.

  • 8 small ripe peaches
  • 2 tablespoons lemon juice
  • 1 - 2 tablespoons maple syrup
  • 1 tablespoon raisins, chopped
  • 3/4 cup ricotta cheese

 

Method

Peel peaches and cut in half, removing pits. Keep halves paired.

Rub peach halves with lemon juice.

Stir raisins, ricotta and maple syrup together. Heap mixture into half of each peach and cover with second half to re-form peach. Stand peaches upright, letting the halves separate slightly at the top to show a mound of filling.

Elegant.  

Serves: 6 -8
