Blueberry Buckle

Oh, those nutritious blueberries.  Eat them as often as you can.

  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1 egg
  • 2 teaspoon baking powder
  • 1 cup shortening
  • 2 cups flour
  • 2 cups blueberries
  • Topping (recipe below)
 

Method

Preheat oven to 350°F.

Mix together sugar, shortening and egg. Stir in milk.  Sift together flour, baking powder
and salt and stir into sugar mixture. Gently fold in blueberries, combining well.

Spread batter in 9x9 pan.  Prepare topping:

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup soft butter or margarine

Mix ingredients together and Crumble on top. Bake 45-50 minutes in preheated 350°F oven.
