Pear & Pecan Coffee Cake

We see this as delicious on Christmas or Thanksgiving morning, or any of the lazy days after the holidays.

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1 1/2 cup pears, peeled, cored, diced
  • 1 teaspoon vanilla

Topping

  • 1/2 cup brown sugar
  • 3/4 teaspoon cinnamon
  • 2 tablespoon soft butter
  • 1/2 cup pecans, chopped
 

 

 

Method

Preheat oven to 350°F

Cream butter and sugar until light and fluffy. Beat in vanilla.  When combined, add egg. Beat until smooth.

Mix together flour, baking powder, baking soda, and salt. Add to butter mixturealternately with sour cream. Mix just to blend after each addition, but do not overmix.

Fold in pears. Spread in an 8" greased square pan.

Mix brown sugar, cinnamon and the soft butter until well combined. Stir in the chopped walnuts. Sprinkle the nut topping evenly over the cake.

Bake in preheated 350°F oven for 40-45 minutes or until top is well-browned and a toothpick comes out clean. Cut into squares and serve warm or at roomtemperature.
