New Orleans Style Fruit Cake

The Big Easy offers this easy New Orleans style recipe.

  • 4 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 pounds pecans
  • 2 teaspoon flour
  • 1 teaspoon baking powder
  • 1 pound each: candied pineapple, cherries and dates
 

Method

Preheat oven to 300°F.

Beat together the eggs, sugar and vanilla until frothy.

Mix together the flour and baking powder.  Coat the candied fruits with this mixture. Stir in the egg/sugar/vanilla mixture and combine gently until all pieces are coated.

Line 2 loaf pans with wax paper and pour the mixture in each pan, dividing evenly. Bake in preheated oven for 1 hour.

Serves: 12
