Spiced Almond Bars

These bars could just as easily be left intact and served as a cake. Delicious either way, but nice to have as a bar.

  • 1 teaspoon cinnamon
  • 1 teaspoon allspice,
  • 1/4 teaspoon ground clove
  • 1/2 teaspoon salt
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup ground almonds,
  • 1 teaspoon grated lemon zest
  • 2 large eggs
  • 3/4 cup sugar
  • 3/4 cup honey
  • 1/2 cup milk

 

 

METHOD

Mix spices, salt, flour, and baking powder together until blended. Stir in almonds and lemon rind.

In a separate bowl beat eggs and sugar together until a ribbon is formed when the beater is removed. Stir in honey and milk .Gradually stir in flour mixture. Stir until smooth.

Spread batter in an greased and floured 11 X 17 inch jelly roll pan. Bake in preheated 400° F for 12 to 15 minutes, until dough is done. Turn out and put on a wire rack to cool.

Glaze: Mix together confectioners' sugar, almond extract, rum, and enough water to make pliable. Beat until smooth. Spread glaze over prepared cake.

Cut 1 X 2 1/2 inch bars while still warm.

Yield: About 4 dozen bars.
