Persimmon Cookies

If you have a persimmon tree in your back yard, you eat persimmons fresh and make make persimmon cookies as well.

  • 2 1/2 cups all-purpose flour (unsifted)
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon grated nutmeg
  • 1 cup pistachios, chopped
  • 1 cup golden raisins
  • 1 cup persimmon pulp, well mashed (2 large persimmons)
  • 1 teaspoon soda
  • 1 cup margarine
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 teaspoons grated lemon zest (about 2 small lemons

 

 

METHOD

Mix together flour, salt, cinnamon, allspice and nutmeg. Set aside.

Mix persimmon pulp with baking soda .

Cream together margarine and sugar. Stir in lemon zest and persimmon pulp. Stir to combine. Break in eggs and mix well.

Stir in dry ingredients. Mix well.

Drop by rounded teaspoons on cookie sheet and bake in preheated 375°F oven for 12 to 15 minutes or until cookies brown on the edges.

Cool on wire racks.

Yield: About 5 dozen cookies
