Low-fat Oatmeal Cookies

Low in fat and made with nutritious oatmeal, known for its health properties, these cookies are heart-healthy.

  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup egg substitute
  • 1 teaspoon vanilla extract
  • 3/4 cup water
  • 1-1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups old-fashioned Quaker Oats
  • 3/4 cup raisins
  • 3/4 cup chopped dates

 

 

METHOD

Preheat oven to 350°F.

In a food processor, cream both sugars with oil, egg substitute, and vanilla. Add water slowly, continuing to beat. On low speed add flour, baking soda, and salt. Pulse until blended. Stir in oats, raisins, and dates and blend well.

Drop by tablespoons onto lightly greased cookie sheet. Flatten slightly with the back of the spoon.

Bake in preheated 350° F oven until golden brown, about 12 minutes.

Yield: About 3 dozen cookies
