Preheat oven to 350°F. Lightly grease foil for cookie cookie sheet.
In large bowl, with an electric mixer, cream together the shortening, granulated sugar and brown sugar. Add the eggs and vanilla and beat until well blended.
Stir in the flour, baking soda, salt, baking powder. Add oats, nuts, chocolate chips and coconut and mix until combined.
Drop by spoonfuls on foil lined cookie sheet cake pan. Bake 8-10 minutes, then transfer cookies to wire rack. This recipe is easily doubled if you have a good mixer.
